<li>mince the ginger. I use ginger powder in the video to save time.</li>
<li>cut the scallion. I used dried scallion flakes in the video to save time</li>
<li>lay the ox tail in the slow cooker. How much ox tail to get really depends on the size of your slow cooker. It is recommended that the meat never exceds 2/3 of the total volume. Fill the slow cooker to the top is not a good idea. </li>
<li>put in the ginge, scallion, soy sauce, sesame oil. (the amount can vary, adjust according to taste.)</li>
<li> add just enough water to cover all meat. Uncovered meat is less likely to be cooked. You can also use cans of beef soup, or beef soup mixed with water to add meaty taste. You might not need all 6 cups of water or you will need more. Depends on the size and shape of your slow cooker. </li>
<li>Cover and turn it on low for 10 hours. </li>
