Description
This is a simple but tasty recipe from my friend Sade. She simplified several steps to make it a fast recipe. I loved it. It goes well with steamed vegetables such as broccoli, carrot and asparagus. White wine is a plus.
Ingredients
- 1 lb uncooked shell off shrimp. smaller ones are cheaper and faster to cook.
- 1 shrimp scapi sauce, usually available next to the sea food stand.
- 2 bn scallion
- 1 lb pasta angel's hair
Instructions
- Thaw the shrimp and pad dry with paper towel
- Dice the scallion
- Heat up a wok with medium heat or a pot add premium olive oil.
- Sauté scallion and the shrimp till the shrimp are opaque and slightly brown.
- Add the shrimp scampi sauce and turn down the heat.
- Boil a pot of water for cooking pasta
- Optional: Add Goya all season spicy
- After boiling add angel’s hair.
- When pasta is done, about 10 to 15 minute.
- Take out the pasta and pour on the sauce.
- Make sure you stir and mix the sauce with the pasta.
Notes
Like my other recipe the exact amount of each ingredients are up to your taste. For example, I love shirmp so I would use 1 to 1.5 pounds of shrimp for one pound, (one box) of pasta.
Angel's air is the the thinest boxed pasta. It cooks fast and great for this recipe.
The shrimp scapi sauce included oil, salt and other premixed ingredients to simplify cooking.
Pasta usually takes 10 to 20 minutes. I ususally stir in between to make sure they don't stick to the buttom of the pot. When in doubt I taste it before I take it out. When not sure, cook a little longer.
A lot of recipe book adds salt to pasta water. You can add Goya all purpose seasoning to add some flavor. but same idea.
Mixing the sause with the pasta is important. If your pasta tastes kind plain, you did not mix the sauce well enough.
