I never really cooked it myself but based on the recommendations of others and my own observation. Vietnam spring roll wrapping is a great way to get rid of leftovers. First of all, it can be stored for a really long time. The fact is that even the manufactures don't bother to put an expiration date on the package. (Not that it is not a good practice.) Second, it is very easy to make. All you need to do is put it in warm water. No cooking necessary. Third advantage is that it sticks to itself really well. So even if you are not good at wrapping stuff you won't make too much of a mess. The ideas is when you have a bunch of leftovers, you microwave them and wrap them with Vietnamese spring roll wrapping. Then wala you have a brand new dish.
You can find more information on Vietnamese spring wrapping on line. For example this site has a picture of how to make them.
There were total 8 people at the dinner. I used one 1 and 40 minutes to prepare and cook all the food. At the end everyone was full and I had leftovers for the week.
